  • 3.0 pounds Squid, cleaned and cut into rings
  • 1 cup Soy sauce
  • 1 cup Mirin
  • 1/2 cup sherry(optional)
  • 1 cup Water
  • 2.0 tablespoons Sugar
  • 1.0 teaspoons Cornstarch
  • 2 lemons (juice of)

To make the teriyaki sauce, combine all ingredients except the cornstarch. Reserve half of the sauce, and marinate the squid in the other half for 1 hour.

Prepare the grill. Skewer squid pieces and tentacles. Heat the reserved teriyaki sauce in a saucepan. When it begins to boil, add the cornstarch dissolved in a little water. As soon as the sauce thickens, remove from heat. Baste the squid with this teriyaki sauce as it cooks.

2 to 3 minutes per side

Grill the squid until it turns dark brown, 2 to 3 minutes per side, depending on the heat. Turn the squid over, baste one last time, then remove the skewers from the grill. Serve over rice accompanied with any remaining sauce.
