  • 1 pound cleaned squid tubes
  • 2/3 cup flour
  • 1/3 cup fresh Italian parsley sprigs
  • 1 zest lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

Step 1

Pulsate flour, salt, and white pepper in a food processor to create the coating.

Cut cleaned squid tubes into 1/2 inch thick rings. Tentacles can also be used if desired.

Dry the cut squid on paper toweling.

Lightly mix the dried squid rings with the prepared coating, removing any excess flour.

Heat corn oil in a pan with high sides, about 2 inches deep, to at least 375 degrees Fahrenheit.

4-6 minutes

Fry the coated squid in two batches until light brown and crisp.

Drain the fried calamari on paper toweling and serve.
