Campfire Fish Dinner

Ingredients

4 pan-dressed trout (flounder or salmon works well too)
2 smalls onions - halved and sliced
8 mediums carrots - sliced
2 tablespoons of butter
Salt and pepper - for seasoning

Preparation

Place each piece of fish on heavy-duty aluminum foil and add lemon and onions to the fish cavities.

Sprinkle with salt and pepper and fold foil tightly.

Place the carrots on heavy-duty aluminum foil and add the butter.

Sprinkle with salt and pepper and fold foil tightly.

Grill carrots for around 10 minutes.

Add fish to the grill and cook 25-30 minutes - or until fish is flaky and carrots are tender.
