Sweet Banana Chutney

Ingredients

500 grams Bananas
325 grams Raisins
225 grams Sugar
20 grams Salt
25 grams Curry Powder

Preparation

Peel and cube the bananas into small cubes.

Add vinegar and boil until the mixture looks like porridge.

Add fruit and spices and simmer for a further 15 minutes.

Spoon into sterilized jars and leave to cool.

It has long be a tradition in our house that during the month of August we make Mango Chutney, because this is when the mango's are in season and are a reasonable price per kilo, we normally make the years supply, which is a lot because ourselves and our fiends love it, so we end up giving a lot away. But unfortunately last year the mango's were very expensive, so we broke with tradition. The only problem being we had no chutney, until whilst at a friend house one evening she gave me a bag full of fallen banana's from the plantation (we live in Tenerife, island is covered in Banana plantations), because she had too many, couldn't think what to do with them, but needed to come up with something quick as they wouldn't keep, that's when this recipe was created.
So we are all happy now, it tastes better the longer you keep it, it's more of a sweet chutney than the mango one, but it's still delicious, with the added advantage banana's are available all year round and are cheap to buy.
