- 2 beets
- 1/2 cup pitted prunes
- 2 tablespoons olive oil
- 1 clove garlic(optional)
- 1 pinch salt
- 1 pinch pepper
- leaves parsley(optional)
Instructions
Step 1
Wash the beets and place them in a pot to boil. Boil them for about an hour, or until they are soft inside when checked with a knife.
Step 2
Wash the prunes and finely chop them. If you prefer, or in addition to prunes, you can use chopped walnuts.
Step 3
Once the beets are cooked, drain the water, let them cool, then peel and shred them.
Step 4
In a mixing bowl, combine the shredded beets with the chopped prunes. Add pressed garlic if you are using it. Season the salad with salt and pepper, then drizzle with olive oil. Mix all ingredients very well.
Step 5
Serve the salad garnished with fresh parsley leaves, if desired, to enhance the taste.
