  • 2 pounds fresh asparagus
  • 0.25 pounds sliced mushrooms
  • 2 tablespoons rice or wine vinegar
  • 0.5 cup olive oil
  • 0.25 teaspoon mustard
  • 2 cloves garlic, crushed
  • 0.25 teaspoon fresh thyme
  • 0.25 teaspoon fresh oregano

Step 1

Prepare asparagus by snapping off ends.

4-5 minutes

Blanch asparagus for 4-5 minutes, then drain and chill.

Mix remaining ingredients (vinegar, olive oil, mustard, garlic, thyme, oregano) to create the dressing.

Pour the dressing over the chilled asparagus and chill again.

Add sliced mushrooms to the salad.
