Mediterranean Quinoa Salad
- 2 cups chicken breast, cooked cut into small cubes
- 1 cup mixed vegetables, cooked
- 1 cup quinoa, cooked
- 2 Roma tomatoes, sliced
- 1 small cucumber, sliced
- 1 small onion, cut into rings
- 2 tbsp olive oil
-1/2 cup feta cheese,
-1/2 tsp oregano
In a large bowl Combine tomatoes, cucumbers, onions, veggies and chicken.
Next add the feta cheese. Top with quinoa and drizzle with olive oil and oregano.
