Chefw's Oyster Pockets

Ingredients

puffed pastry
cracker crumbs
lemon for juice & zest

Preparation

Cut pastry into squares

Slightly butter and add lemon juice to pastry

Place single spinach leaf on each pastry

Add shredded cheese and cracker crumbs

Add lemon zest and fold over and crimp edges

Deep fry, or bake (or for use as dumplings boil)

About

I like Oysters Rockerfeller, but not the messy shell or inconvienience. These can be made up in advance and pulled out for last minute appitizers.
