Xocai Healthy Chocolate Polka Dots


3 whole egg whites (at room temperature)
12 tsp cream of tartar
18 tsp salt
34 cup sugar
1 tsp vanilla extract
12 cup dark chocolate (Xocai Healthy Chocolate XoBiotic Squares, melted)


Preheat oven to 350 degrees. Spray 2 baking sheets with nonstick cooking spray and cover with parchment paper (not wax paper). In a bowl beat the egg whites, cream of tarter, and salt at high speed with electric mixer. Continue to beat egg whites until soft peaks form. Add sugar slowly, a little at a time. Continue to beat for 2 minutes, or until stiff, shiny peaks form. Using a large rubber spatula, fold in vanilla extract and melted XoBiotic Squares. Place in pastry bag, or use a large zippered bag and cut 1/2 inch of the tip off. Pipe one inch dots onto the baking sheet and bake for about 25 minutes or until the tips are brown. Cool on wire rack completely and store in an airtight container. Makes 50 dots
