Eggnog Muffins

Ingredients

2 cups flour
2/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup rum
5 tablespoons butter or margarine, melted
1 large egg, beaten
1/2 teaspoon nutmeg, grated

Preparation

Sift together flour, sugar, baking powder and salt in a large bowl. Stir in eggnog, rum, melted butter, egg and nutmeg.

Spoon into 12 paper-lined muffin cups.

Bake on middle rack in preheated oven for 20 minutes, until a toothpick inserted in the center of the muffin comes out clean.

Cool on rack 10 minutes before removing from pan.
