pumpkin bread

Ingredients

for topping:
1 T all-purpose flour
5 T sugar
1 t ground cinnamon
1 T butter
for bread:
3 cups all-purpose flour
3/4 t salt
2 t baking soda
1.5 t ground cinnamon
1 t ground nutmeg
1/4 t ground allspice
1 (15oz) can pumpkin puree
3/4 cup vegetable or canola oil
4 large eggs lightly beaten
2.25 cups sugar
2 granny smith apples, peeled, cored and diced

to make topping:

blend all the ingredients together in a bowl with your fingers until the mixture resembles coarse meal. set aside.

to make the bread:

butter two loaf pans and set aside. in one bowl sift together the flour, salt, baking soda, cinnamon, nutmeg and allspice. in another bowl, whisk together the puree, oil, sugar, and eggs. add the flour mixture into the wet ingredients bowl, stirring well until incorporated. fold in the apples if using.

divide the batter between the two loaf pans and sprinkle the topping on top of each. bake for 50-60 minutes, until a toothpick comes out clean.

growing up, i wasn't a big fan of pumpkin... it all started when i tried a piece of pumpkin pie and the texture didn't mix well with me :/ for years after i avoided anything pumpkin because of that bad memory. a few years ago however, when i was first working for garnish catering, i had to make pumpkin bread... i LOVED it!!!!!!! this bread is so crazy yummy and easy to make - my favorite combo! i made it earlier this fall with nutella swirled throughout the batter for a new twist and fell in love all over again!
