Ingredients
Vegetable oil for deep frying
salt and pepper
Smelt
Shrimp (with heads and shells on)
inch Squid, cleaned and cut into on tubes
inch Lemon slices, about ¼ thick
Whole shallots
Preparation

Heat oil in a stockpot

Cook fish in batches beginning with the smelt. Dust the smelt in the bowl until thoroughly covered

Add to hot oil until browned

Removed to a rack or paper towel covered plate

Repeat with shrimp, then the whole shallots, then the lemons, finishing with the squid.

Serve with fresh lemon wedges or a lemon aioli.
