- Grated Romano cheese
- 1 cup mozzarella, shredded
- 1 cup cheddar cheese, shredded
- 16 oz sour cream
- 2 cups salsa
- 1 jalapeño, chopped
- 1 red onion, sliced
- 5 cloves garlic, chopped
- 28 oz crushed tomatoes
- 1 quart button mushrooms, sliced
- handful fresh Italian parsley
- 4 sweet or hot sausage links, chopped
- drizzle olive oil
- 1 pounds macaroni
- 1 cup tortilla chips, crushed
- dashes fresh ground black pepper
- dashes sea salt
- dashes red pepper flakes
- dashes dried oregano
- dashes ground cumin
Instructions
Step 1
Preheat oven to 350 degrees F.
Step 2
Heat a griddle. Grill sliced mushrooms with a drizzle of olive oil while preparing the sauce.
Step 3
Bake sausage links in the oven while preparing the sauce. Once cooked, slice the sausage.
Step 4
In a sauce pan, heat a few drizzles of olive oil. Sauté onion, jalapeño, and garlic until the onion is softened. Add salsa and simmer on low. Stir in grilled mushrooms, crushed tomatoes, parsley, sausage, and all seasonings. Continue to simmer on low.
Step 5
Cook macaroni according to package directions.
Step 6
Drizzle a little olive oil at the bottom of a baking dish. Add the cooked macaroni and toss with the olive oil. Add sour cream, crushed tortilla chips, mozzarella, and cheddar cheese; toss to combine. Add the sauce and toss gently again. Top with additional sauce, mozzarella, and grated Romano cheese.

Bake for 20 to 25 minutes.
