Mushroom Soup

Ingredients

1/2 pound sm. mushrooms
4 tablespoons butter
1 1/2 tablespoons flour
1 quart milk
1/4 cup salt
pepper to taste
1 Shallot onion

Preparation

Wash mushrooms and slice (use stems too).

Saute in 2 tablespoons butter until well browned. add shallot onion

Make a cream sauce with 2 tablespoons butter, flour and milk.

Add chicken stock and mushrooms. Stir constantly. Season to taste.

Why of why were the mushrooms removed from this recipe!!! I can't believe much from this site :( because of this.
