Wheat & Wheat Bran Sweet Potato Mini-Muffins
Wholewheat Flour - 1/2 cup, unsifted
Unprocessed Wheat Bran - ¼ cup
Sweet Potato - 1 1/2 cups,shredded finely(Use box grater's fine-grate side)
Brown Sugar - 3/4 cup, packed
Cinnamon Powder - ½ teaspoon
Baking Powder - ½ teaspoon
Vanilla Extract - ½ teaspoon
Allspice Powder - ¼ teaspoon
Salt - ¼ teaspoon
Olive Oil - 3 tablespoon
Skimmed Milk - 2 tablespoon
Honey - 1 tablespoon
Craisins - 1 tablespoon
Walnuts/Almonds - 1 tbsp, roughly broken
Preheat the oven to 350 degrees F.
Grease the wells of the muffin pan with little oil.
Using a spatula, spoon the mixture into the wells of the muffin pan
Cool for 10 minutes prior to removing the muffins.
