Soy Sauce Pork Belly / Tau Yew Bak

Ingredients

1/2 kilogram pork belly, best with skin on
1/4 cup +2 tbs sweet, thick caramel soy sauce
3 cloves garlic, smashed
2 tablespoons water
1/2 tablespoon light soy sauce, optional

Preparation

Clean pork belly and cut into strips and then slightly larger than bite-sized pieces as the meat will shrink during cooking.

Place all ingredients into slow cooker, toss well to coat the meat evenly.

Cook on high for about an hour or until it starts to boil, then reduce setting to low and cook for another 2 hours or longer if you prefer the meat to be softer. Or just leave it on the low setting for 4 - 5 hours.

Serve over cooked white rice with sambal belacan.

Sorry folks, no healthy options for this recipe, it's the fat that makes it rich and flavorful....indulge a little. I don't usually add the light soy sauce, but my mum always complains everything I cook is not salty enough ... and you wonder why she has hypertension.
Don't worry about the lack of liquid initially... you'll get plenty from the juices from the meat.
