Thumbprint Jelly Biscuits

Ingredients

cup sugar
1 teaspoon salt
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 sticks COLD butter, chopped

In a stand mixer, combine all dry ingredients in the bowl

With the paddle mixer attached, turn it on, and then start to add the butter.

The mixture should resemble sand when all the butter is "mixed in"

Add the buttermilk and mix till just combined.

Roll dough out onto a floured surface and cut with either a knife in squares or with a cookie cutter. Place on a parchment paper lined cookie sheet.

Indent the biscuit with your thumb to make a little pool for your jelly to go.

Fill the hole with a blob of your favorite jelly and bake!

Take out when golden brown (7 minutes for small biscuits, 13-15 for larger)
