Fresh Spinach and Gorgonzola Dip

Ingredients

For the Spinach:
2 bunches of fresh spinach
4 cloves of garlic
¼ tsp. salt
¼ tsp. red pepper flakes
2 tbs. olive oil
For the Dip:
Drained spinach
4 oz. gorgonzola cheese
¼ cup parmesan cheese
Juice of ¼ of a lemon
¼ tsp. red pepper flakes
1 clove of garlic
1 tbs. honey

Preparation

For the Spinach:

Clean spinach and pat dry. Toss the garlic with the spinach.

Heat a large frying pan with the olive oil and carefully add the spinach and garlic.

Add the salt and red pepper flakes and toss until lightly wilted.

Remove from the heat and place in a colander over a bowl to drain.

For the Dip:

Place all of the above in a food processor and process until desired consistency.

Serve with your favorite crackers or veggies.
