Garlicky Shrimp Pasta With Arugula Salad

Ingredients

1/2 tablespoon olive oil
1/2 cup shallot, finely chopped
2 cloves garlic, finely minced
1/2 pound shrimp, medium, peeled and deveined
1/2 cup white wine
1/2 cup pasta broth
2 ounces goat cheese
4 cups arugula
2 teaspoons olive oil
1 pinch salt
1 pinch pepper

Preparation

Cook pasta according to box directions, reserving 1/2 cup pasta broth.

In a large non-stick skillet heat 1/2 tablespoon olive oil and add shallots. Cook for 3 – 5 minutes until shallot is very tender. Add garlic, wine and pasta broth reduce by 1/3 and then add shrimp. Cook shrimp 3 – 5 minutes until it just curls. Add goat cheese and toss until cheese melts.

Add pasta to shrimp mixture.

Toss arugula with remaining olive oil and season with salt and pepper. Serve with pasta.
