Crunchy Wild Alaskan Salmon Salad

Ingredients

4 ounces salmon filets
2 tablespoons sweet onion, finely chopped
2 tablespoons sweet pickle relish
2 tablespoons celery, finely chopped
1 tablespoon low fat mayonnaise
1 cup arugula

Preparation

Season salmon filet with salt and pepper and bake in 350 degree oven for 20 minutes until salmon just flakes. Remove from oven and cool in the refrigerator.

Flake cooled salmon and combine with remaining ingredients, except arugula.

Place half the mixture in your bread of choice.

Top with arugula.

My grandmother used to make salmon salad with her leftover salmon. At the time I thought it was a great idea, and I still do.

What a great lunch. Heart healthy salmon on a great whole wheat sour dough bread, with colorful arugula. Talk about a good way to power the rest of your day!
