Leftover Rotisserie Chicken Toss

Ingredients

1 cup Shredded Rotisserie Chicken, skin removed
I Ripe Avocado, peeled and diced
6 Baby Carrots, sliced thin
2 Green Onions, chopped
Garnish with:
1/8 cup Good Blue Cheese or Feta Cheese, crumbled
Raw Walnuts, chopped or Raw Pinenuts
For the Dressing:
Freshly Cracked Pepper, to taste

Preparation

Toss all the vegetables and shredded chicken with lemon juice, extra virgin olive oil, salt and pepper. Just eyeball this, no need to make a vinaigrette.

Garnish with Blue Cheese or Feta Cheese Crumbles

Sprinkle Chopped Walnuts or Pinenuts

Add to your favorite salad greens or this can stand alone with some nice bread
