Peach Ketchup

Ingredients

3 Fresh California peaches or nectarines pureed
(about 1 1/2 cups pureed)
1 cup Sugar
teaspoon Ground cinnamon
teaspoon Ground mace or nutmeg
teaspoon Ground ginger
teaspoon Ground cloves
teaspoon Salt

Preparation

In medium non-aluminum saucepan, combine all ingredients. Bring to a boil, reduce heat and simmer 20 minutes, stirring occasionally, or until mixture is reduced to 2 cups. Pour into clean glass jar. Store up to 3 weeks in refrigerator.

This recipe yields about 2 cups of peach ketchup.
