Mediterranean

Ingredients

- 3 eggs, beaten
- 1 cup mixed vegetables, cooked ( peas, green beans, carrots, corn )
- 1 can ( 7oz - 200gr ) beef, cooked
- 1 tomato, cut into cubes
- 1/2 cup of canned tomato sauce
- 2 tbsp of fresh parsley, chopped
- 1 onion, chopped
- yellow & green pepper, chopped
- salt, cayenne pepper,
- 2 tbsp olive oil

Preparation

In a large pan heat the olive oil ( medium heat )and sauté the onion and the peppers, for about 3 min.

Add the mixed vegetables, tomato, tomato sauce, beef and simmer ( medium heat ) for about 3 min.

Add the egg mixture, mix well, and simmer ( low heat) two more min.

Season with salt and cayenne pepper and serve.
