Vegan Pizza Party 3 Pizza Recipes

Ingredients

Mediterranean Inspired Pizza
1 whole wheat pizza dough + ¼ cup of flour for work surface
1 cup of artichoke hearts
3 cloves of garlic
1 ½ tsp of olive oil
½ cup of kalamata olives sliced
3/4 of sweet onion thinly sliced
5 cups of spinach
1/4 cup of vegetable broth
¾ cup of vegan mozzarella cheese
2 tbsp of oregano
3 tbsp of olive oil
A pinch of red pepper flakes (optional)
BBQ Pizza
1 whole wheat pizza dough + ¼ cup of flour for work surface
3/4 cup of thinly sliced red onions
a sprinkle of brown sugar
1 tbsp of olive oil
1 tbsp of vegan butter
1 cup of corn
¾ cup of vegan cheddar cheese
½ cup of BBQ sauce
2 tbsp of chopped scallions
Roasted Sweet Potato Pizza
2 Sweet Potatoes thinly sliced and peeled
¾ cup of thinly sliced vidalia onion
1 tbsp of thyme
2 tbsp of olive oil
A dash of salt and pepper
½ cup of chopped pecans
2 tbsp of maple syrup

Preparation

Mediterranean Inspired Pizza

1) Begin by Preheating oven to 350

3) Place cloves of garlic (with skins still on) on a piece of aluminum foil, drizzle 1 1/2 tsp of olive oil over cloves and tightly fold aluminum foil over garlic, place in oven and let roast for 30 minutes or until garlic is soft, once done set aside.

2) On a floured surface knead dough, stretch dough using your hands, place dough on a greased baking sheet and roll out dough to spread across the length and width of a baking sheet

3) In a food processor add in artichoke hearts, red pepper flakes, and squeeze in roasted garlic ( make sure to peel skin before adding in garlic) Pulse for 1 minute until you have a slightly chunky consistency, using a spatula place contents in a small bowl and set aside

4) Heat Vegetable broth in a sauce pan over medium heat, add in spinach and wilt, immediately drain spinach and rinse with cold water to stop spinach from cooking, once cool enough to handle chop spinach

5) In a skillet heat 1 1/2 tbsp of olive oil, add in onion and caramelize on low to medium heat

6) Gently brush pizza dough with olive oil and sprinkle half 1 tbsp of oregano over dough, next spread your garlic and artichoke mixture over dough, top with chopped spinach, and kalamata olive, sprinkle mozzarella cheese on top, followed by the remaining 1 tbsp of oregano

7) Let bake for 20 - 25 minutes until cheese has completely melted and crust is slightly browned and crispy.

BBQ Pizza

1) Begin by Preheating oven to 350

2) On a floured surface knead dough, stretch dough using your hands, place dough on a greased baking sheet and roll out dough to spread across the length and width of a baking sheet

3) Over medium heat pour olive oil into a saute pan, add in sliced red onion and brown sugar saute until onions become fragrant and slightly browned and all of sugar has been dissolved

4) Simultaneously heat butter in a saute pan over medium heat, add in corn and let saute until corn begins to slightly brown (about 8 minutes), remove from heat and set aside

5) Generously brush BBQ sauce over pizza dough, top with caramelized onion, skillet corn, and cheddar cheese let baked for 20 - 25 minutes or until cheese is completely melted and crust is slightly browned

6) Remove from heat and let cool, garnish with chopped scallions and serve warm

Roasted Sweet Potato Pizza

1) Begin by Preheating oven to 350

2) On a floured surface knead dough, stretch dough using your hands, place dough on a greased baking sheet and roll out dough to spread across the length and width of a baking sheet.

3) In a mixing bowl combine together onions, sweet potato slices, olive oil thyme, salt and pepper, transfer mixture to a greased baking pan and bake for 15- 20 minutes ( potatoes should be slightly tender but still has some firmness to them, they will continue to cook once on the pizza)

4) Remove potatoes from oven and let cool, meanwhile place pecans in a greased saute pan, over medium heat, toast for 1 - 2 minutes until nuts become fragrant, add in maple syrup and salt, stir frequently until syrup has caramelized, remove from heat and let cool

5) Evenly spread potato mixture over pizza dough, top with maple glazed pecans and bake for 25 minutes or until potatoes are tender and pizza dough is slightly browned

About

The first pizza I made was a Mediterranean inspired pizza which included flavorful Mediterranean staple ingredients, such as kalamata olives, spinach, artichokes, oregano, and olive oil.

The Next Pizza I made was a BBQ pizza which was topped with red caramelized onions, sweet skillet corn, scallions, vegan cheddar cheese and a smokey BBQ sauce.

The Final Pizza I made was a Roasted Sweet Potato Pizza topped with thin slices of crispy roasted sweet potatoes and onions, thyme, and maple glazed pecans.
