Carrot and Rice- جزريه- مقلوبه جزر

Ingredients

2 pounds carrots
1 1/2 cups rice, any type of rice of your choice
Salt and Black Pepper to taste
1 1/2 teaspoons of each of the following spices: Allspice,cinnamon, cloves, nutmeg, Oil for frying

Preparation

Peel the carrots, cut into thick sticks then deep fry to a golden color.

Slice and fry the onions.

Wash and soak the rice for 15 minutes and then drain it. If you are using Basmati rice you do not need to soak it.

Assemble the recipe by putting a layer of rice in the bottom of the pot then add a layer of the fried carrot sticks. This recipe will create 3 to 4 layers of rice and carrots.

Add the fried onions on top. Add the last amount of the rice on top and smooth it out.

Add water just about 1/2 an inch above the rice

Cover the pot and cook on high heat until the water starts boiling, then lower the heat and cook on simmer for about 20-30 minutes or until the rice is fully cooked and fluffy.

Invert the pot into a big serving platter- Its best if you use a non stick pot to cook this meal in so it will be easy to invert and will look nice.

Serve hot with plain yogurt.
