Miso Vinaigrette

Ingredients

2 teaspoons Roasted garlic
cup Mirin
2 tablespoons Rice vinegar
Fresh lemon juice to taste
Salt to taste
Freshly-ground black pepper to taste
Sugar to taste

Preparation

Whisk the garlic, mirin, vinegar, stock and miso together to make a smooth paste. Whisk in olive oil and drops of lemon juice to taste. Season to taste with salt, pepper and sugar. Store covered in refrigerator up to 3 days.

This recipe yields about 1 1/4 cups of vinaigrette.
