Insanely Chocolaty Chewable Sandwich Cookies
A Very Happy Valentines Day to all our readers, I don't understand why Cupid was chosen to represent Valentine's Day. When I think about romance, the last thing on my mind is a short, chubby toddler coming at me with a weapon. lol..lol..Whatever the history of Valentine's Day, each February 14 has become a highly commercialized holiday in North America and beyond, that's intended to celebrate love and relationships..OK AGREE..BUT why look for special days..if love is but the discovery of ourselves in others, and the delight is in the recognition,why bind in special days, celebrate it always, thats my thought anyways,......I made these pecan mudslide (original recipe), which demanded for eggs, all purpose flour & pecans, which is replaced here by oats-flour, wheat flour, all purpose & almonds, of course its eggless by replacing egg with apple sauce, rest the taste remains similar. - 1 cup Oats flour
- 1/2 cup Wheat flour
- 1/2 cup All purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1 cup bittersweet chocolate chips
- 1/4 teaspoon espresso powder or instant coffee
- 3/4 cup Sugar (or Xylitol)
- 1/4 cup unsalted butter, at room temperature
- 1/4 cup Canola Oil
- 4 ounces Apple Sauce
- 1/2 teaspoon Vanilla Extract
- 2/3 cup chopped toasted almonds
- White chocolate chips
- 2 drops Orange Extract or essence(optional)
Instructions
Step 1
Line a baking dish with parchment paper.
Step 2
In a small bowl whisk together the flour, baking powder and salt. Set aside.
Step 3
Melt 1/2 cup of chocolate using the double-boiler method or in the microwave. While still hot, stir in espresso powder. Set aside to cool.
Step 4
In the bowl of a stand mixer cream together the sugar and butter until fluffy.
Step 5
Slowly add whisked dry ingredients and mix until combined. Stir in the melted chocolate, and apple sauce.
Step 6
Finally stir in the reserved chocolate chips and toasted almonds.
Step 7
Pour the mixture into the prepared baking dish and spread it into an even-ish layer with a spatula.
Step 8
Preheat oven to 350 degrees F. and line three baking sheets with parchment paper.
Step 9
Place in the fridge for 20-30 minutes, or until firm enough to handle without it sticking to your fingers.
Step 10
Remove the dough from the fridge and slide the parchment paper and dough onto a cutting board. Using a large, sharp knife, cut the dough into equal pieces.
Step 11
Give each piece a somewhat rounded shape with the palms of your hands and place on the prepared baking sheets.
Step 12
Insert into the oven and bake for 12-15 minutes. Or until the surface is just set, but still plenty soft when gently pressed in the middle.
Step 13
Let the cookies settle on the baking sheet for 20 minutes before transferring them to a rack to cool completely.

Microwave or double boil to melt white chocolate. After melting, add 2 drops of orange essence.
Step 15
Once the cookies are cold enough, apply melted white chocolate with a help of a butter knife, on one layer and sandwich it with other.

Put it right in the fridge or set aside, to harden chocolate filling. Enjoy!!
