Garlic & Mozzarella Bread

Ingredients

1 sub roll or demi-load (6-8 inches long)
2 slices mozarella cheese, 1/4 inch-thick and cut into quarters
5 sprigs parsley, stemmed
1 teaspoon salt
1 teaspoon black pepper

Preheat oven to 350 degrees

GARLIC BUTTER:

Mince garlic, shallots, and parsley in a food processor. Then whip in salt, pepper, and butter until mixture is soft.

GARLIC & MOZZARELLA BREAD:

Cut the bread into 1/2-inch slices, being careful not to cut all the way through the loaf

Put a piece of cheese in each slit. Spread the garlic butter over the top of the bread

Put bread on a baking sheet and bake for 15 minutes, or until the cheese is melted and the bread is browned on top

The garlic butter recipe makes 1 cup of garlic butter. This is enough for two 8-inch lengths of bread, or for one loaf of bread with leftover butter to use on pasta.
