Tuscan Tomato Bake

Ingredients

6 ripe tomatoes,skinned and seeded
1 cup sourdough bread,cubed
1 med white onion,chopped
2 garlic cloves,crushed
4 green onion,chopped
salt,pepper
4 tablespoons Italian parsley chopped
1 tablespoon soft butter
1/4 cup parmigiana

Preparation

Butter and coat a baking dish with parmigiana.Place 1/2cup of the bread cubes on bottom of the dish,shred 1/4 cup of the mozzarella over the bread.Mix tomato,onion,green onion,garlic,salt and pepper and parsley.

Pour over the bread mixture.Top with the other 1/2 cup of the bread cubes and the balance of the mozzarella cheese.

Bake @ 350 oF for 30 min or until bubbly and browned.

Very delicious as a side dish or as a lunch main with a arugula salad.
