Mix chicken mince with breadcrumbs and 1/4 knob of grated nutmeg. Add salt and pepper, roll into sausage shape and roll in flour. Brush on a small amount of olive oil into a pan and gently cook on all sides until done. Put on absorbent paper to drain.
Other flavours of nutmeg could be fresh Marjoram and a fine grating of lemon rind; pistachio nuts and orange rind; shallots, chilli and shredded kaffir lime leaves.
