Mango Curried Chicken Salad

Ingredients

10 ounces jar chutney
1 1/2 tablespoons curry powder
1 head broccoli, stemmed and cut into florets
5 pounds boned chicken breast, poached and chilled
1 red bell pepper, diced

Preparation

1. Put chutney, mayonnaise and curry in bowl and mix well. Cover and chill 1 hour.

2. Steam broccoli for 1 minute and drain.

3. Cut chicken into chunks.

4. Combine chicken, broccoli, and red pepper. Add chutney mixture to chicken.
