Yam Sticks

Preparation

Boil yams until just about fork tender

Let them cool. While slightly warm, peel the skin and cut into 2.5 x 1 x .5 inch pieces.

Roll them in sesame seeds, pushing gently to help them stick to the yams.

Pan fry your sticks in some canola oil over medium heat, for about a minute each side, until golden brown and crispy. Let rest on a paper towel.

About

The restaurant I worked at for my first job as a teenager served something like this, but better, called Yam Sticks. This recipe was created in a moment of desperation after obsessing over the elusive yam sticks for almost 10 years. I might also try a version breaded with Panko.
