Almond Crusted Chicken Fingers

Ingredients

1/2 cup almonds
1/4 cup whole wheat bread crumbs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1 pound of boneless skinless chicken breast sliced into medium large strips

Pre heat oven to 475 degrees

Place a metal rack on a baking sheet and oil the rack with cooking spray

In a blender put almonds, garlic powder, paprika, flour and bread crumbs and blend until combined and ground

Put eggs in separate bowl and beat.

Dip the chicken fingers in egg wash then into almond mixture covering thoroughly, place on rack

Place in oven for 20-25 minutes or until cooked through

I love this recipe because I love chicken fingers and this recipes is soo much healthier than regular deep fried chicken fingers and still even healthier than regular baked because of nutrient packed almonds. Enjoy!
