  • 2 pounds Diced Roasted Maple Sweet Potatoes
  • 1 teaspoons Kosher Salt
  • 1 pounds Smoked Pepper Bacon (cooked and crumbled)
  • 24 ounces Michelob AmberBock
  • 2 pounds Sweet Potatoes (canned)
  • 2 Onions, small dice
  • 2 quarts Chicken Stock, strong flavor

In a medium pot, on medium heat, combine chicken stock, onions, and canned sweet potatoes. Cook for about 30 minutes, stirring frequently. Reduce heat to a low simmer. Using a large spoon or wire whisk, break up the sweet potato pieces until the soup is as smooth as possible. Add salt, beer, and crumbled bacon. Cook for another 30 minutes, stirring frequently. Add the roasted maple sweet potatoes and cook for approximately 15 more minutes. If the chowder is too thick, you may add more beer; if so, cook for an additional 10 minutes before serving.
