- 1/2 cup caster sugar
- 1/2 cup softened butter
- 1 cup self-raising flour
- 2 eggs
- lemon zest
- 1 teaspoon vanilla extract
- 4 tablespoons lemon curd
Instructions
Step 1
Mix the caster sugar and softened butter together in a medium microwave-safe bowl.
Step 2
Add the self-raising flour, eggs, lemon zest, and vanilla extract to the bowl and mix until creamy.
Step 3
Microwave the mixture on high for 3 minutes, or until risen and set all the way through. Let it stand for 1 minute.
Step 4
Meanwhile, heat the lemon curd in the microwave for 30 seconds and stir until smooth.
Step 5
Place a plate on top of the bowl with the pudding and carefully tip it over. The pudding should easily fall out onto the plate. If needed, use a spatula to carefully separate the pudding from the sides.
Step 6
Pour the warmed lemon curd all over the top of the pudding and serve immediately.
