Onion-Thyme Potatoes

Ingredients

2 medium russet or Idaho potatoes, thinly sliced
1 large sweet onion, thinly sliced

Preparation

Heat 2 tablespoons olive oil in a large skillet over medium-low heat.

Add onion and cook until beginning to caramelize, stirring occasionally (about 45 minutes).

Preheat oven to 375 degrees.

Brush bottom and sides of an 11 x 7 ceramic dish with olive oil.

Layer 1/3 of sliced potatoes in prepared dish, overlapping slightly.

Top layer of potatoes with 1/2 of onions and 1/2 of thyme. Sprinkle with salt and pepper. Repeat.

End with a final layer of potatoes. Pour broth over potatoes, cover with foil, and bake for 40 minutes.

Uncover, brush with olive oil, and bake for 10-15 minutes or until top is lightly browned.
