- 5 pounds pork roast with bone
- 1 tablespoons salt (for rub)
- 4 cloves garlic, chopped (for rub)

- fresh Italian parsley, chopped (for stuffing)

- 1/2 cup grated Romano cheese
- 1 teaspoons salt (for stuffing)

- 1 tablespoons lemon juice
Instructions
Step 1
Preheat oven to 350 degrees F.
Step 2
In a mixing bowl, combine 1 tablespoon of salt, 4 cloves of chopped garlic, and olive oil (as needed to form a paste) to create the rub. Rub this paste generously over the pork roast.
Step 3
In a separate mixing bowl, combine the fresh Italian parsley, 4 cloves of chopped garlic, 1/2 cup grated Romano cheese, 1 teaspoon salt, olive oil (as needed to cover parsley), and 1 tablespoon lemon juice for the stuffing. Carefully lift the seam under the skin of the pork roast and fill the cavity with the stuffing, pushing it down so it's evenly distributed for each slice.
Step 4
Place the stuffed pork roast in a roasting pan or baking dish. Bake for 20 minutes per pound. Avoid overcooking to prevent drying out the pork.
