Chow Chow

Ingredients

450 grams cucumbers
450 grams onions, medium
450 grams tomatoes
450 grams green beans
450 grams celery
450 grams cauliflower, medium
450 grams cabbage, white
4 tablespoons salt
lt vinegar, malt
250 grams sugar (caster)
5 tablespoons mustard, dry
3 tablespoons flour, plain
1 tablespoon tumeric

Preparation

Peel and slice onion, cucumber, celery and cabbage.

Quarter tomatoes. Cut cauliflower into flourettes.

In a large bowl combine all vegetables. Sprinkle with salt and cover with cold water. Let stand 24 hours. Drain. Add half the vinegar and let stand a furthur 12 hours.

In a large saucepan bring remaining vinegar to the boil. Mix sugar, mustard, flour and tumeric with a small amount of water to a smooth paste. Whisk into the boiling vinegar. Reduce heat and simmer 2 minutes. Add vegetables and liquid, bring to the boil and simmer 20 minutes, stirring often.

Pack hot Chow Chow into hot jars. Cover.

Let mature 1 month before using.

Use green, underripe tomatoes.
