  • 1 tablespoons brown/red miso paste
  • 1 1/2 teaspoons sriracha hot sauce
  • 1/2 teaspoons soy sauce
  • 1/2 teaspoons dark brown sugar
  • 10 grams dried porcini mushrooms
  • 1 tablespoons soy sauce
  • 1 1/2 tablespoons white wine vinegar
  • 1 teaspoons sugar
  • 1 teaspoons brandy
  • 1 teaspoons cornflour (aka cornstarch)
  • 200 grams button/chestnut mushrooms
  • 1/3 cup neutral oil such as sunflower or groundnut
  • 1 tablespoons whole black peppercorns
  • 1 medium fresh red chilli, thinly sliced
