Vegetable Fried Rice
cup Basmati Rice - 2
Bell peppers - I used half of red and yellow colour
Carrot - 1 cut into thin strips
cup Beans - ½
cup Green peas - ¼
cup Corn - ¼
cup Cabbage - ¼ finely grated
small Onions - 1 finely sliced
Soya sauce - 1 tbspn
Cashews and raisins
Oil - 3 spoons
Cook the basmati rice with 4 cups water..
Meanwhile, in a saucepan add the oil and fry the onions..
Once they turn soft and translucent add the ginger garlic paste and green chillies and saute for a minute..
Then add all the vegetables,salt and pepper..
Sprinkle very little water and allow the veggies to cook for two minutes..
They should be half cooked..
Now add the soya sauce and chilli sauce..
Now add the cooked rice to this vegetable mixture and stir this mixture for a minute or two in low flame..
Roast some cashews and raisins in ghee and also add them..
Fried rice is ready..
Or just tomato sauce and raita will do..
This is my favourite rice item..
I just love it..
