WHITE CHOCOLATE MOUSSE WITH BERRIES

Ingredients

1 quart heavy cream, well chilled
1 pound Sugar cubes
1 cup egg whites (8 large)
1 cup water
2 pounds white chocolate, cut in small cubes

Preparation

Whip cream and set aside.

Place sugar in saucepan, pour water over cubes. Boil until sugar melts and syrup reaches hard-ball stage (255° on candy thermometer).

Whip egg whites to form soft peaks, then reduce speed of mixer and slowly pour in syrup.

Add chocolate pieces to warm mixture. They should melt somewhat.

Combine mousse base with cream.

Pour in serving bowl and chill at least 4 hours.

Meanwhile, make Berry Sauce:

Puree 3 quarts of strawberries or raspberries;

stir in ¼ cup superfine sugar, ¼ cup Kirsch, and pinch of salt.
