Twice Baked Sweet Potato Gratin

Ingredients

4 Large Sweet Potatoes scrubbed – choose those resembling baking potatoes
1 tablespoon Unsalted Butter, melted
1/2 tablespoon Thyme
3/4 teaspoon Salt
1/4 teaspoon Pepper
1 teaspoon Cornstarch
1/2 cup Smoked Gouda – shredded

Preparation

Preheat oven to 375 degrees. Pierce the potatoes with a fork. Place on baking sheet and bake in oven for 40 minutes. Remove from oven and slice each potato in half lengthwise. Return to oven and bake for 40 minutes longer.

When cooled, reduce heat to 350 degrees. Scoop out contents of the potatoes into a bowl. In a separate dish, whisk together cornstarch and whipping cream. Add to potato mixture, along with butter, thyme, salt, pepper and Gouda. Mash the ingredients with a potato masher and fill the potato shells.

Top with parmesan cheese. Return to oven and bake for 30 minutes longer.

This is a holiday favorite we have had in our family for years. I have updated to create individual baked potato servings for a more day to day useage, rather than the Thanksgiving casserole.
