Marsala Sauce

Ingredients

1 quart Demi-glace
3 tablespoons Shallots, minced
12 Peppercorns, coarsely ground
3 ounces Marsala wine

Preparation

Combine the demi glace, shallots, & peppercorns in a sauce pan, simmer until the mixture thickens.

Strain the sauce through cheesecloth and put sauce in a clean saucepan.

Add wine & simmer, adjust seasonings with salt & pepper to taste.

NOTES : YIELDS: 1 QUART; 1 LITER
