The Gourmet Butcher's Flat-Iron Roast

Ingredients

kosher salt (must be kosher)

Preparation

Take four to five well-trimmed flat iron steaks.

Lay one on top of the other – till you have a nice stack-o-steak.

Tie it all together tightly with strings no more than one inch apart.

Trim each end just a teeny bit so everything’s nice and even (eg: no bits hanging out).

Season with kosher salt and pepper. (Remember that regular salt draws moisture out of meat.)

Cook uncovered in a 400 degree F oven for about 40 minutes.

Remove and let it rest for 5-10 minutes.

This is better than prime rib.
