Honey Pine Nuts Muffins
250 grams (9 oz or 2 cups) all-purpose flour
100 grams (3.55 oz or ½ cup) sugar
15 grams (3 tsp) baking powder
2 1/2 grams (½ tsp) salt
240 milliliters (8 fl oz or 1 cup) milk
60 grams (2 oz or ¼ cup) butter, melted
85 grams (3 oz or ¼ cup) honey
pine nuts to sprinkle
Preheat the oven to 400F degrees. Grease a muffin pan.
In a large bowl, combine the flour, the sugar, the baking powder and the salt.
Remove from the pan and let them cool on a wire rack.
Note: these muffins are better served warm. If you are looking for muffins with a strong taste, this is NOT the recipe for you. Wally thought they were pretty bland in taste. I like them because they were light and because the not so strong taste made them perfect to be spread with butter and/or jam (or nutella or any yummy spread you can think of), almost like a biscuit!
Btw, if you stick to the original recipe from Taste of Home, they claim these muffins are 182 calories each, so...pretty guilt free! :)
Have a sweet day!
