Minted Feta Yogurt Dip


1/4 red onion, peeled and grated (or very finely minced)
1 tablespoon minced garlic (about 2 fat cloves)
1 tablespoon minced fresh mint
1 tablespoon fresh lemon juice
1/8 teaspoon kosher salt or to taste. (The amount of salt to add will vary depending on the s
Freshly ground black pepper - several grinds)


Combine all of the ingredients, taste for seasoning and allow to sit for at least an hour for the flavors to blend. Garnish with fresh mint leaves, more crumbled feta and serve with meats, breads, vegetables, plain crackers or chips. Enjoy!


This quick and easy recipe is healthy and tasty - and nice to have on hand for a snack too. If you thin it out with a bit of milk it also makes a terrific salad dressing!
