Susan's Mocha Cookies

Ingredients

teaspoon salt
2 teaspoons vanilla
1/2 teaspoon almond extract
2 1/2 cups unbleached flour
3 teaspoons excellent cocoa

Preparation

Beat butter for five minutes until very soft, then slowly add the confectioners' sugar

Add in the salt, vanilla and almond extract until fully combined

Next, sift together the flour and cocoa and add to the creamed mixture until well combined

Finally, add the ground coffee beans

For squares, shape dough into long rectangular logs and refrigerate overnight if possible.

When ready to bake, cut into 1/4-1/3 inch thick slices, bake on ungreased cooked sheet for 20 minutes at 325 degrees. Just out of the oven, roll the cookies in granulated sugar, and let

Here is a truly delicious holiday cookie that preserves some of the old fashion quality of shortbread with the Seattle signatures of great coffee and chocolate. They are beautiful, can be made into shapes or served in squares. And like some many holiday cookies, it is finished in sugar, so even though the cookie is not overly sweet, there is enough sugar to satisfy even the most ravenous sweet tooth.
