Stollen Muffins
It was a spontaneous idea to meke Stollen Muffins :)... We have got lots of dried fruits anyway for making the stollens... And I have got plenty of almond marzipan remaining also - even I might have saved a bit the marzipan for the stollens, as I haven't been really sure if it wouldn't spoil the daugh... So I have decided to improvise with these quick last minute Stollen-Muffins :) But they are surprisingly tasty though!!

- 0.5 cup <a href="/QZYNNXBY">icing sugar</a>
- 2 <a href="/RLJKG6JT">egg yolks</a>
- 1 cup <a href="/K7473XN2">milk,</a> lukewarm
- 2 cup <a href="/W7LCJR7C">all purpose flour</a>
- 1 package <a href="/J2KTPXCW">baking powder </a>(10 g)
- 1 teaspoon <a href="/XBPNFKYS">salt</a>
- 1 <a href="/NPP2VV8J">Zest </a>of <a href="/NMZYZYB2">lemon</a>
- 1 teaspoon <a href="/M6K52CTC">almond extract </a>or <a href="/SZC3QLP7">vanilla extract</a>
- 0.5 cup sliced <a href="/V6D3WG47">almonds</a>
- 0.5 cup raisins, soaked in <a href="/L3Y6HKTL">rum </a>the night before or ½ minutes in the microwave

- 0.5 cup <a href="/QZYNNXBY">icing sugar,</a> sifted
- 0 Colored <a href="/PNQG4HRF">coconut </a>shavings
Instructions
Step 1
<a href="/H3S4YV46">Preheat oven </a>to 360F (about 180 C).
Step 2
In a large bowl or bowl of electric mixer <a href="/3CYMY2D7">beat </a>butter until <a href="/B52FHCF2">turns </a>white.
Step 3
Add the <a href="/RP8LCDPZ">icing </a>sugar and <a href="/3CYMY2D7">beat </a>until <a href="/B52FHCF2">turns </a>to fluffy <a href="/R3P5MM3Z">cream.</a>
Step 4
Add egg yolks one at a time and <a href="/3CYMY2D7">beat </a>well.
Step 5
In a <a href="/WRFN6T6X">separate </a>bowl <a href="/7S3QCKWK">mix </a>together flour, <a href="/HF7TLMS7">baking powder </a>and <a href="/DPSVTKVY">salt.</a>
Step 6
Alternately add to butter mixture lukewarm milk and flour mixture and <a href="/DRM2WPZ4">stir.</a>
Step 7
Add the grated lemon <a href="/RSDQ7YW8">peel,</a> almond or vanilla <a href="/QQBJYYGF">extract,</a> almonds, raisins and diced <a href="/RF7SRX43">dried </a>fruit and <a href="/7S3QCKWK">mix.</a>
Step 8
<a href="/NX588QBK">Spoon </a>the dough into the oiled muffin forms, filling about 2/3 of the forms.
Step 9
<a href="/3JDX2Q84">Slice </a>the marzipan (or make little marzipan balls) and dip 1 or ½ <a href="/3JDX2Q84">slice </a>(or ball) in each muffin and try to cover with dough.
Step 10
<a href="/RNT367Z2">Bake </a>in <a href="/H3S4YV46">preheated </a>to 360 F (about 180 C) oven for about 20-25 minutes or until golden b<a href="/D434P8MH">rown, </a>as in about 15 minutes may cover muffins with b<a href="/RNT367Z2">aking p</a>aper or cooking foil – so they will not burn.
Step 11
Remove and spread with <a href="/LWS4TC42">melted butter </a>while hot and sprinkle with plenty of <a href="/RP8LCDPZ">icing </a>sugar and <a href="/HT4RHHGB">colored </a>in red and green coconut shavings (or any other suitable :) Christmas muffins decorations).
