Wheat and Gluten Free Turkey Meatloaf
My doctor has me on an eating plan that is a real challenge. It wouldn’t be too difficult if it were just wheat and gluten I have to stay away from, but add the no dairy or eggs, and cooking meals becomes far more difficult.
I hunted all my favorite recipe sites for something to do with some ground turkey breast, and couldn’t find anything that didn’t call for some kind of binder. Namely bread crumbs and eggs. I gave up and decided to make my own version of turkey meatloaf using rice checks and Italian salad dressing to bind the meatloaf together. Turkey breast can be pretty pale, so I also added chopped spinach to add some color.
All in all, the turkey came out moist, delicious and very savory thanks to fresh rosemary. You can’t beat fresh herbs to perk up any dish!
