Maren's Black Forest Cake


1 cup milk
1 tablespoon vinegar
1 teaspoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs (I like to separate and beat whites for a fluffier cake)
1/2 cup vegtable oil
1 cup black coffee (strong and cold)
1 teaspoon vanilla extract
20 cans oz of cherry pie filling (I like to use fresh, but you can use 1 of pre-made filling)


Pre heat oven to 350 degrees. Grease 2 circle cake pans.
Make sour milk buy combining milk and vinegar in a separate small bowl.
Sift together flour, sugar, cocoa powder, baking soda, baking powder and salt. You can use a whisk to do this if you do not have a sifter. Set aside and in a large bowl whisk together the eggs, oil, coffee and vanilla. If you chose to separate the eggs: mix in the yolks but fold in the whites last after all the liquid and dry ingredients are already throughly mixed. Stir in the sour milk to the wet ingredients.
Gradually beat the dry mixture into the wet mixture. (Fold in whites here). Pour batter into prepared pans and bake for 30 minutes. Turn out and allow layers to cool completely before frosting and constructing the cake. Enjoy




I love this recipe as a layer cake with cherry or creamcheese filling (get creative) but I also like it just as a very rich chocolate cake for flavored frostings like Chai.
